ALICE'S CORN BREAD
1 CUP FLOUR
1 CUP CORN MEAL
DASH SALT
4 TSP BAKING POWDER
2 TSP SUGAR
1/4 CUP SHORTENING
3/4-1 CUP MILK
COMBINE ALL AND MIX WELL
POUR INTO A GREASED 9X9 BAKING DISH
BAKE 400 FOR 40-50 MINUTES
HELEN KINNISON BBQ MEATBALL
3 LB HAMBURGER
1 CAN MILK
2 CUPS OATMEAL
2 EGGS
1 ONION FINELY CHOPPED
1/2 TSP PEPPER
1 TBP CHILI POWDER
COMBINE AND MIX WELL
MAKE INTO WALNUT SIZE MEATBALLS
SAUCE:
2 CUPS KETCHUP
1 CUP BROWN SUGAR
2 TBP LIQUID SMOKE
1/2 TSP GARLIC POWDER
1/2 CUP CHOPPED ONION FINE
COMBINE AND MIX WELL
BROWN MEATBALLS
PLACE INTO LARGE BAKING DISH
POUR SAUCE
BAKE 350 FOR 1 HOUR
Mom's Refrigerator Rolls
1/4 cup sugar
3 tablespoons vegetable oil
1 1/2 teaspoons salt
1 cup milk
1 package yeast
3/4 cup lukewarm water
1 egg, beaten
4 to 4 1/2 cups flour , divided
Butter, melted
In a large bowl, combine sugar, vegetable shortening, and salt; stir until well blended. In a small saucepan, scald milk; pour over sugar mixture. Cool to lukewarm . In a small bowl, combine yeast and water; stir until yeast is dissolved. Mix in egg until well blended; stir into milk mixture. Add 2 cups flour. Gradually stir in as much of the remaining flour as dough will absorb, mixing well. (Add additional flour carefully. You can always add more flour, but once you've added too much, the result will be a dry product.) Place dough into a well-greased bowl, turning to grease top. Cover bowl and dough with wax paper and a towel, held in place with a rubber band. Refrigerate at least 8 hours but no longer than 5 days. Place the balls (in the desired style you want - see below) onto prepared baking pan or into prepared muffin cups. Cover and let rise in a warm place (85 degrees), free from drafts, until double in bulk, about 1 hour. Preheat oven to 400 degrees F. Bake 15 to 20 minutes or until golden brown. Remove from oven and remove from pans. Yields 16 to 24 rolls (depending on size).
BBQ MEATBALLS
1 lb LEAN ground beef
1/2 onion diced
¾ cup quick oatmeal
salt and pepper to taste
½ cup milk
Mix all ingredients and form into balls the size of a quarter.
Sauce:
1 cup ketchup
2 Tbsp. vinegar
2 Tbsp. brown sugar
2 Tbsp. onion diced
½ cup water
2 Tbsp. Worcestershire sauce
Mix all sauce ingredients well. Place meatballs in baking dish. Pour sauce over and bake at 350 for about 1 hour. Or, place raw meatballs in crockpot and mix sauce ingredients. Pour sauce over meatballs and cook 6-8 hours until done on low.
