Clam Dip Recipe
1 8-oz. package cream cheese, softened
1 C. mayonnaise
2 T. onion, finely minced
3 cloves garlic, finely minced
Salt and pepper, to taste
Few drops Tabasco sauce
1 can minced clams, drained, juice reserved
Mix softened cream cheese and mayonnaise together until very smooth. Add the onion, garlic, salt, pepper and Tabasco sauce. Add enough of the clam juice to reach a consistency you like. Stir in the clams. Chill at least two hours, but it is better made one day ahead.
BUFFALO CHICKEN DIP
1 package (8 ounces) cream cheese, softened
1 can (10 ounces) chunk white chicken, drained
1/2 cup buffalo wing sauce
1/2 cup ranch salad dressing
2 cups (8 ounces) shredded Colby-Monterey Jack cheese
Tortilla chips
Spread cream cheese into an ungreased shallow 1-qt. baking dish. Layer with chicken, buffalo wing sauce and ranch dressing. Sprinkle with cheese.
Bake, uncovered, at 350° for 20-25 minutes or until cheese is melted. Serve warm with tortilla chips.

SHAPE DOUGH INTO EGG SIZE DUMPLINGS
DROP DUMPLINGS IN LIQUID
BRING BACK TO BOIL
REDUCE TO SIMMER AND ALLOW TO COOK FOR 45 MINUTES

1/2 CUP PARMESON CHEESE SHREDDED
1/4 TSP SALT
1/8 TSP GARLIC POWDER
DASH PEPPER
COMBINE AND MIX WELL AND CHILL
SERVE WITH CRACKERS, CHIPS OR VEGGIES

2 LB VELVEETA SOFTENED
4 OZ CAN PIMENTOS DICED AND DRAINED
1 CAN GREEN CHILES DRAINED
1/2 LB SOFT OLEO
1 PINT MIRACLE WHIP
1/2 CUP SUGAR
2 TBP VINEGAR
COMBINE ALL INGREDIENTS AND MIX WELL
STORE IN REFRIGERATOR

1 SMALL ONION CHOPPED

COMBINE INGREDIENTS AND COOK TILL MEAT IS DONE AND DRAIN
ADD:1 LB. GRATED OR CUBED VELVEETA CHEESE
COOK TILL CHEESE IS MELTED
REMOVE FROM HEAT AND ALLOW TO COOL SLIGHTLY
SPREAD ON RYE BREAD
PLACE ON COOKIE SHEET IN SINGLE LAYER
BAKE 350 FOR 10-15 MINUTES
TEXAS CAVIAR
2 (15-ounce) cans black-eyed peas, rinsed and drained
1/2 onion, finely chopped
1 tablespoon chopped fresh cilantro
1 tomato, finely chopped and drained
1 fresh jalapeño pepper, stem and seeds removed, coarsely chopped
1/2 cup bottled Italian dressing
In a large bowl, combine all ingredients except dressing. Pour dressing over top and toss to coat well.
Cover and chill until ready to serve.
