TODAYS HELPFUL TIP:

HOW TO EASY PEEL A POTATO. TAKE A PARING KNIFE, AND MAKE A SINGLE SCORE THROUGH THE SKIN AROUND THE POTATO. PUT IN HOT BOILING WATER AND BOIL FOR 15 MINUTES. REMOVE AND PUT DIRECTLY INTO ICE WATER. WHEN YOU REMOVE, POTATO SKIN WILL SLIDE RIGHT OFF. TRY IT AND SEE.

Pork Lo Mein

1 pound spaghetti

3/4 cup chicken broth

1/2 cup soy sauce

2 teaspoons sugar

2 tablespoons peanut oil

2 pork tenderloins (about 2 pounds total), thinly sliced

8 scallions, thinly sliced

2 carrots, sliced diagonally

1/2 pound fresh mushrooms, sliced

1/2 pound fresh snow peas, trimmed

Prepare the spaghetti according to the package directions; drain and keep warm in a large serving bowl.

Meanwhile, in a small bowl, combine the chicken broth, soy sauce, and sugar; mix well and set aside.

In a large skillet, heat the oil over high heat. Add the pork and cook until no pink remains, stirring constantly.

Add the scallions, carrots, mushrooms, snow peas, and the chicken broth mixture. Stir-fry for 3 to 5 minutes, or until the vegetables are crisp-tender. Toss with the spaghetti and serve.

VIRGINIA'S TUNA TERRIFIC

18 JUMBO PASTA SHELLS COOKED TILL TENDER AND DRAINED

1 CAN TUNA DRAINED

1 CUP BREAD CRUMBS

1/4 CUP ONION

1 EGG

1/4 CUP FRESH PARSLEY

1 TSP LEMON JUICE

1 CAN CREAM OF CELERY SOUP

1/2 CUP MILK

2 TBP GRATED PARMESON CHEESE

COMBINE TUNA, BREAD CRUMBS, ONION , EGG, HALF OF PARSLEY, AND LEMON JUICE , AND MIX WELL

FILL EACH PASTA SHELL WITH 1 TBP MIXTURE

PLACE IN A 9X13 SPRAYED BAKING DISH

COMBINE SOUP AND MILK AND MIX WELL AND HEAT

ADD REMAINING PARSLEY

POUR OVER SHELLS

SPINKLE WITH CHEESE AND SPRINKLE OF PAPRIKA

COVER AND BAKE 350 FOR 20-25 MINUTES

 

 

NORMA'S MAC AND CHEESE

1 TBP BUTTER

1 TBP FLOUR

STIR AND MAKE A ROUE

1 1/2 CUPS MILK

2 CUPS SHREDDED VELVEETA

2 HANDFULS OF MACARONI IN BOILING WATER AND COOK TILL TENDER

ADD TO MIXTURE
